DAD’S HAT + PM SPIRITS COLLAB – 6 YEAR OLOROSO SHERRY FINISHED RYE

There's a huge difference between a generic "sherry cask" created for aging a spirit and a prime sherry cask that held high quality wine for decades. For a long time, we'd been working with Sherry expert and friend of PM, Eduardo Ojeda, in order to source some of these casks, but it is rare for bodegas to get rid of them – they have no incentive to do so, as they can use the barrels indefinitely. In 2024, however, Eduardo let us know that a friend of his was willing to part ways with a number of freshly emptied Oloroso sherry casks, and we scored twenty exceptional ones.

We chose to send them to friends of ours who distill, blend, and bottle exceptional spirits. This is the first release in this series, a full proof rye whiskey distilled by Dad's Hat. It aged for six years before finishing for eight months in an Oloroso sherry barrel.

Mashbill: 80% rye, 15% barley malt, 5% rye malt
Fermentation: 5-7 days, sweet mash
Distillation: Double distilled on a hybrid CARL still
Aging: 6 years in new charred american oak
Finishing: 8 months in oloroso sherry cask
ABV: 61%

Through the 19th Century and up until Prohibition, Pennsylvania rye whiskey was the premier American whiskey. Classic cocktails like the Manhattan, Old Fashioned and Whiskey Sour were originally made with rye whiskey. After suffering during Prohibition, most Pennsylvania distilleries went out of business – few survived into the 1960s and all were gone by the 1980s. Dad’s Hat returned rye whiskey to its historical home in 2011.
